Spotlight Duo

Cold windy (Wyoming) weather turns our thoughts to hearty meals. Roasts, stews, soups come to mind. These two spice recipes work wonders for these menu items.

When working with roasts or steaks rub the spices into the meat and place in the refrigerator for at least 2 hours prior to cooking. You can mix a marinade of ½ cup vinegar or white wine, ½ cup olive oil and 1 or 2 tablespoons of the rub mix, shake well. Marinate the meat in this mixture at least 6 – 12 hours and then cook as preferred.

Some suggestions for the South of the Border include, chili, quesadillas, enchiladas, and fajitas. Chicken, pork and beef interchange well in these recipes. Mountain Top Garlic is a versatile recipe that can be used in dipping oils, vegetable and chip dips as well as rubs and marinades.
