In 58 days spring will be here and we have started the countdown!!
Let’s start another week off with a few quick thoughts: hopefully everyone stayed
warm, safe and avoided frost bite. Bear Creek Rubs spent January 12,13, and 14 at
the Cheyenne, Wyoming home show. It was cold and I don’t think anyone was really ready for the cold and snow. I sure wasn’t!!! Talked to a lot of very nice people

If you and your family enjoy fish or have a youngster that wants to learn to cook this
recipe is simple and easy to follow. You will even be able to slip a math lesson in if you need to reduce the recipe. I know it calls for 6 salmon fillets but if your family is smaller in number it is simple to adjust.
Cold Roasted Salmon
Olive oil to grease baking dish
6 6-oz center cut salmon fillets
3 TBSP peppercorn or tarragon mustard
3 slices crisp cooked bacon, drained and choppped 3 oz goat cheese, crumbled 3 TBSP Mountain Top Garlic Rub
Chopped fresh chives optional
Preheat oven to 475 degrees. Lightly oil a 15 X10 inch baking pan with olive oil.
Arrange salmon fillets in prepared pan. Turn under any thin portions of fillets to makeuniform thickness. Spread mustard over tops of fillets.Liberally sprinkle fillets with
Mountain Top Garlic Rub.
Roast 15 to 18 minutes or until fish flakes easily when tested with a fork. Transfer to plate, cover and chill at least four hours or up to 24 hours. To serve, arrange salmon on a serving dish top with chopped bacon, goat cheese and if desired chives. If
serving this dish cold doesn’t appeal go ahead and serve it hot. It is good either
way.

you are a hiker or camper this will be right up your alley!! Quick, easy to prepare,
and oh so tasty! Next week will be the grand entrance of the new products and
